If you're looking for something fun and special to do with your friends or family or just curious on how we make all the great treats that we do, this is the place.

Chocolate making class:

In this class we will explore the process of chocolate as soon as we receive the raw bean. Roasting and cracking/winnowing are covered briefly before moving to the grinding of the chocolate and then of course the molding of the bars. This is where we will spend the majority of our time. Tempering chocolate to achieve that tremendous mouthfeel and snap of the bar as it's broke off is a difficult task, but I'll be able to show you a few things we can do so that you will walk out with several bars of your own making. Expect 1.5-2 hours, we'll supply everything including the packaging that you will design while we are waiting for the chocolate to set. 

$65 per person, 4 person minimum. 6 person max. 

Truffle making class:

This is the fun one in my opinion. To start we'll talk about what it takes to make a perfect ganache, then you will make the ganache, We will pipe the ganache onto a tray that will be chilled briefly and then hand rolled into the balls which can then be rolled in many toppings or dipped in tempered chocolate. Then how we can mold it to our specs and replicate the process. You'll walk out with 18 truffles of your making in  a decorative box. Expect about 2 hours

$65 per person, 4 person minimum. 6 person max. 

Bonbon making class:

Here we will spend our time designing and painting our molds, we will teach you about products we use and why along with all of the tools necessary. Once the molds are painted, we will allow that to set briefly and then fill with a chocolate shell. While that is setting we will create our ganache as the filling. Either dark or milk chocolate. We might even have some fun things to add to your bonbons to create a layered experience. We will teach you to pipe the ganache nito the shell and then cap to seal. Now we retire to the bar for a glass of wine (alcoholic beverages are extra) if you wish and will talk about flavors and answer any questions you may have. When the bonbons are ready to be released you'll demold them and box them in special packaging. You will go home with 18 bonbons in  a decorative box to share with your friends and family. Expect 3 hours.

$85 per person 4 person minimum and 6 person max.

Chocolate tasting level 1, 30 minutes $15 per person (2 person min, 40 max): 

We'll spend about 30 minutes discussing flavor and where it comes from. While tasting all of the origins that Pollinator Chocolate has in stock.

 

Chocolate tasting level 2, 60 minutes, $35 per person (2 person min, 40 max)

Digging a little deeper, we'll go into the making of the chocolate without having to get all of our hands dirty with chocolate. We will taste all of the origins we have and discuss the process of bringing in the bean from origin to the finished tempered bar.

 

Chocolate tasting level 3, 1.5-2 hours $55 per person (2 person min, 40 max)

This is a deep dive into where cacao comes from, the origins and early use of cacao by the native tribes 3000 years ago. We'll also talk about the farming of the beans, where and how it's grown, and what it takes to get it to us where we now enjoy it. Following that is a discussion of the process I put it through so we have chocolate as we have today and especially craft chocolate that is vastly different from commodity chocolate. We will taste through every bar I make, exploring the complexities of each flavor. From darks to milks.
