Cacao tea is the "waste product" of the cacao roasting process. The cacao bean is roasted and cooled and then "cracked" in a machine called a winnower. The winnower separates the nib (chocolate) portion of the bean from the paper thin shell that protects it. This paper thin shell and quite a lot of cacao dust are collected separately so we can make cacao tea out of it. We use a blend of Ghana and Dominican Republic shells. We hope you love it!
